Fabulous Breakfast Quiche

This is one of my favorite make-ahead meals.  It is relatively easy to make and my husband loves it.  I usually will make two at a time and freeze for later.  This is a really good dish to make when you are at the end of a carton of eggs that are about to go bad!


Quiche In A Bag (Recipezaar recipe # 290442, Shannon’s notes & modifications in italics)


1 cup meat, browned (pork sausage)
3/4 cup vegetable (thawed chopped spinach)
1 cup cheese, shredded (swiss)
1/4 cup onion, diced (changed to 1/3 cup)


2 cups milk (2%)
4 eggs (Egg Beaters equivalent of 4 eggs)


1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon Tabasco sauce
1/2 cup whole wheat flower
2 teaspoons baking powder
(Added 1 teaspoon Fox Point seasoning - this is an awesome seasoning mix you can get from Penzeys)


To prepare:
-Combine meat, vegetable, cheese, and onion and place in a labeled 1-gallon freezer bag.
-With a mixer or blender, combine the milk, eggs, Tabasco sauce and remaining dry ingredients.
-Pour into the bag with the meat/vegetable mixture. Seal and freeze.


To serve:
-Thaw completely and shake bag well.
-Pour into a greased deep dish pie plate or quiche pan.
-Bake at 350º for 50 minutes, until lightly browned on top and well set in the center.
-Cool about 5 minutes before serving.
